Raan, or roast leg of mutton, is a spectacular and lavish dish that can elevate your spread to a royal one! Although the dish sounds and appears simple, it involves highly complicated method of fine cooking to achieve the perfect tenderness and flavours.  It requires marinating for 48 hours and slow cooking for long, until the meat is melting away from the bone. The fabulous texture and amazing taste are the result of complex cooking manoeuvres.

We serve the galawati raan with green coriander chutney.
