Kawabs are the pride of our cuisine...rich, succulent, appetizing and melt-in-the-mouth! They are prepared by boiling chopped mutton along with chana dal and various spices until completely tender, followed by grinding the meat. We use the traditional ‘sil-batta’ for this as it maintains the fibrous texture, and does not reduce it to a paste like consistency. It is then shaped into patties and shallow fried to a perfect brown.

They are great to be served as appetizers or used in the main course. Another great advantage is they can be frozen and used whenever required (our packaging facilitates freezing).

We give green coriander chutney with kawabs, and they taste best with sheermals.
