An exceptional preparation which is characteristic to the royal Awadhi ‘dastarkhwan’, it consists of meat in a rich and fragrant ‘salan’ (gravy). Qorma is prepared by braising meat with browned onions, spices and curd, which allows the incorporation of the meat juices in the curry. The curd gives the qorma a smooth velvety base, the finely ground browned onions provide texture, and the spices impart richness to this delectable preparation.
It is recommended to be savoured with tandoori roti or sheermal.
