Hyderabadi Mutton Biryani

As the name suggests, this biryani developed in Dakkan (Deccan), under the influence of the Nizams and the local Andhra cuisines, and in reflection of the regional palate is a spicier and tangier version. Also known popularly as ‘Kacchey gosht ki biryani’, the meat is allowed to tenderize in a curd-based marinade, and cooked on ‘dum’ along with soaked rice, which allows a perfect amalgamation of the flavours. The use of greater number of ingredients- herbs, spices and condiments, give it a strong characteristic flavour and texture.

As is the tradition, this biryani is served with ‘Tamatar-cut’, a pungent and flavourful tomato chutney.
